Chicken Drumsticks Noodle Bowl with Mushrooms and Chiles

              Sometimes eating just rice alone is not very interesting. Spicing things up a bit could brighten your day with just a few cool tricks. It is not a secret that rice noodles have been an important dish in Asian countries, thanks to the abundance of rice resources and tropical weather. Have I not told you yet that making rice noodles is no longer a whole day job which used to be one back in the old day. Anyway, many kinds of rice noodles are ready to be served with just a boil of water and how cool is that! I am going to show you a simple recipe that takes you no more than 15 minutes to prepare a delicacy canned sardines noodle bowl with mushrooms and chilies, and some extra vegetables if that’s your jam. Ok first thing first, let’s grab some ingredients that you already have in your fridge. 

You need:

  1. Dried shiitake mushrooms
  2. Kimchi, you have one
  3. Red Chilli, preferably fresh
  4. Garlic cloves
  5. Persian Cucumber
  6. Beetroot
  7. Spring Onion
  8. Low-sodium soy sauce
  9. Sesame Sauce
  10. Cooking oil
  11. Marinated chicken drumstick or Shrimp
  12. Carrots

NOODLES AND ASSEMBLY Here we go, I am not going to bore you on how you should cut your vegetables. You should feel free to cut it in style to your preference but I suggest making it small so that it looks better in your dish later once everything combines. If you only have one stove like I do, I suggest you prepare the rice noodle first because rice noodle tastes better after a longer period of cooling down. 

Step one: Cook the rice noodles according to package directions. Rinse under water, then drain. Transfer to a medium bowl and store it in a freezer for 10 minutes. 

Step two: Heat up your frying pan and drip in some cooking oil then gently place your marinated chicken drumstick. Flip it every 30 seconds so that you don’t burn the meat. 

Step three: Prepare your cut vegetables in the bowl and with the rice noodles. Pure a teaspoon of sesame oil and soy sauce into the bowl. 

Step four: Put your cooked drumsticks onto the noodle bowl and be ready to serve. Hey, is it simple enough? Right, freshly cooked rice noodles at home will delight your appetite as well as step up your Instagram snaps.
